Chef Manny of Don Q Rum released a recipe on October 30 for a dish named bloody eyes meatballs. The guide accompanies a cocktail recipe called the Don Q Carijillo. Both items are provided as a pairing for dining.
The meatball preparation calls for two pounds of ground beef that is 80 to 85 percent lean. The mixture includes two large eggs, one cup of plain or Italian-style breadcrumbs, and half a cup of grated parmesan cheese. Additional ingredients are half a cup of finely minced yellow onion, two teaspoons of kosher salt, one teaspoon of black pepper, one teaspoon of Italian seasonings, one teaspoon of minced garlic, one teaspoon of oregano, and a quarter cup of sliced basil.
Instructions direct the cook to set the oven rack to the lower-middle position and heat the broiler. A large baking sheet should be lined with foil and lightly greased with olive oil. The chef advises mixing the ingredients by hand in a large bowl until combined. The mixture is portioned into three-ounce balls, roughly the size of an egg. This process yields 14 to 15 meatballs, which are spaced evenly on the sheet.
The meatballs are broiled in the lower-middle position until the surface browns. This takes about 10 to 12 minutes. They are then flipped and cooked for an additional 2 to 3 minutes to brown the other side lightly.
The accompanying Don Q Carijillo requires one ounce of Don Q Reserva 7, half an ounce of licor 43, and half an ounce of rich simple syrup. The recipe also calls for 2.5 ounces of cold brew or espresso. The ingredients are shaken and served on the rocks. An orange zest garnish is placed over the glass.
